One of the many things I love about Pinterest are all the recipes. Plus I find myself actually making most of what I pin. This weekend I came across this:
I changed it up a bit so my nutritionist wouldn't TOTALLY kill me on Wednesday so here's my version below.
Jalapeno Popper Chicken - Oven Fried
4 4oz chicken breasts, pounded thin
4oz neufchatel cream cheese (I found I needed even less than this)
1/4 cup cheese (I used colby jack since that's what I had)
2 jalapenos seeded and minced (I used 1 1/2, but 2 would have been fine)
about a cup or so of panko bread crumbs
Mix cream cheese, jalapeno and shredded cheese. Pound chicken breasts until thin. Spread layer of cream cheese mixture onto the chicken breasts, fold together and secure with toothpicks. Roll in panko (I actually just laid each breast in the panko while I stuffed them).
Heat oven to 350. Spread a thin layer of olive oil in a cast iron skillet. Place each breast in the skillet and bake for 30 minutes or until cooked through.
Seriously this turned out AMAZING. I seriously could have eaten two of these and said screw the leftovers. I'm sure with the bacon in the original recipe it is probably even better. I didn't have any (gasp, I KNOW) and like I said, I'm trying to be kind of good right now. I also made the potatoes that she mentions in her post using a bit of olive oil in the pan instead of the 1/2 cup of butter.
