Carrot Cake

I've been craving carrot cake for about 2 weeks now. I have no idea why. One day I just wanted it and that won't never went away.

Then last week Pioneer Woman posted a carrot cake recipe and I took it as a sign that I needed to make one. I did google other recipes, but most were pretty similar so I just went with her's. I did up the amount of carrots to 3 cups and I don't think it's overly carroty. I also added the pecans to the cake rather than to the frosting.

Did you know I've never made frosting before? I could eat this entire bowl of frosting. OMG, it was so good!

The only thing that sucks about baking now is that I don't have an office to take it to to share it with people. There are 80 million people that work at the store so yeah it'd be gone in a minute, but most of them probably don't know who I am so the gesture would be kind of lost on them. I'm not sure if John's coworkers would particularly like carrot cake either. I could take it to the restaurant (which I probably will) but there are usually all of 5 people that work there on the days that I work. I hope all 5 of them like carrot cake!

  1. At work, we each have one month to bring in dessert for birthdays. My month is April. Last year, I attempted carrot cake...the result, chocolate cake with carrots in it. I've never lived it down. Yours looks to die for though! YUM!
