0 point soups are great to have around for a filling snack. Plus it's a little warm up during the cold weather. This recipe is also a crockpot recipe, which I love, just dump and walk away. My type of recipe! I think this recipe would be great if you threw in some pasta, to make it similar to a minestrone soup, but then it wouldn't be 0 points.
Italian 0 Point Soup
10 oz spinach leaves
2 medium carrots, chopped
2 medium celery stalks, chopped
1 large onion, chopped
1 medium garlic clove, minced
4 cups vegetable broth
28 oz canned diced tomatoes
2 bay leaves
1 Tbsp basil
1 tsp oregano
1/2 tsp red pepper flakes, crushed
Place all ingredients into the crockpot, cover and cook on high for 5 hours. Remove bay leaves, stir and serve. Yields about 1 cup per serving.

When I was on plan before I bought 1 1/2 cup containers that are great for this soup. You know the perfect portion since it's marked on the container and they're easy to stack in the freezer.
