Chicken Fried Rice

Yay for having written a couple of posts over the weekend! Now I can post a recipe and bump my other rambling, I'm sitting at my desk crying, hoping no one comes in to my office and needs something or I might start doing the ugly cry post down. Thanks everyone for their kind words, emails and phone calls. I really appreciate it. Like I said I thought I'd be ok, but it's a lot losing two grandparents close together plus all the normal crazy that goes on. I couldn't even talk to John yesterday after I got off the phone with my mom and just sent him a couple of text messages saying that mom said to stay put. He suggested we hold our own wake or do a little something ourselves for my grandpa and that text almost set off the ugly cry. Not pretty folks. In fact the tears are coming again and because I have to look somewhat presentable for a training I have to teach this afternoon I'm leaving you with a chicken fried rice recipe. Enjoy.

What do you do when you have 2 large containers of rice left over from a bachelorette party?

You end up eating a lot of rice for a week.

Chicken Fried Rice

1 cup dry rice
3/4 pounds chicken breast
2 eggs, beaten
green onion chopped
peas about 1/2 a cup
carrots about 1/2 a cup
oil
2 Tbsp soy sauce

Make your rice in the cooker or on the stove. If you make it the night of, make sure it's cold. Hot rice turns mushy when you make fried rice.

Coat the bottom of a pan with oil and cook chicken, set aside. Fry two eggs, when egg is cooked add green onion, peas and carrots. Add rice and chicken and then soy sauce to taste. I don't like soy sauce much, so I just add enough to give the rice that light brown color.
