More food that I don't need

There's a man that is retiring at work. We had a party for him yesterday and had an awesome pound cake with pineapple fluff icing. We call it yum-yum cake. Today it was a chocolate cake with butter cream icing and a pudding filling. Yummmm....people need to retire/have birthdays/have babies every day.

Mmmm...

A big, fat, juicy burger covered in cheedar cheese with tater tots washed down with a Dr. Pepper that isn't diet sure can make a sucky day start to look better.

Ugh!

Can we just rewind this week and start over? Or actually lets just make it Friday.

So yesterday I decided to give the corneal molding another chance. I call the doc on my way to the orthodontist to have them order the new lenses. They say they want me to come in to get new mappings of my eye. Ok, no big deal, they say I'll be in and out. They can get me in at 5 since I'm in that area. I actually get there early hoping they can get me in sooner. 5:45 I finally get called back. Are you kidding me? My ortho appt was at 3:30 and I had hoped to be home around 4 so I could make the baked spaghetti I have been lusting over. We finish the test and then realize that the stupid tech did it wrong. Gotta do it again. So then I go to pay for the new lenses, $280, oh wait, that's per lens. WTF!? So yeah, I just spent $560 on freaking contacts. I better not go and leave these in any hotel rooms. (When I signed up 2 yrs ago they said somewhere between $300-400, $560 is a bit steep to me) Whatever, I pony up the cash, errr credit card, and leave. The doc is at Stone Oak and Huebner, I'm at Blanco and 1604 when they call to say, oh the doc needed to see you can you come back. UGH!!!! This is after I've just hung up with John who says he was about to take a nap so now he can't brown any hamburger meat for my baked spaghetti. It's freaking 6 pm! You've been home for 2 hours! You couldn't have taken a nap then!?

So yeah, I'm not impressed with the eye doc right now. I'm almost wishing I had saved my money and just gone with the regular contacts again. Plus I can't stand the sight or the sound of the glorified receptionist's voice. He still makes me angry even though I get a good chuckle at seeing him answering phones for a living now.

Then this morning. I wake up late. I didn't want to get out of bed because it was FREEZING in the house. Yep, 62 again. I'm going to have to write a letter to Mr. Global Warming next.

So I'm running late and as I'm sitting at a stop sign, waiting for the line of cars to get on to the access road, my freaking coffee decides to leak all over me. I have the "Oh crap" moment where my foot leaves the break for a split second and I end up hitting the car in front of me. Fan-freaking-tastic. Luckily no damage was done, it was a super sweet little couple and we were all on our way in a few minutes.

Ugh! Now I just have to wait for the 3rd craptastic thing to happen to me today.

I hate you mountain cedar

Dear Mountain Cedar,

Will you please please please go away. You've made my husband sick for close to a month now. It's gotten so bad that he is convinced that he is allergic to our new house.

Then the other day when our cold front blew in you decided to mess with me to. Usually you and I get along pretty well, but you had to go and hit "dangerous levels." What, had I not paid you enough attention? My husband had already become a big sick baby that was driving me insane, was it not enough for you? As if half the population of the city wasn't already miserable, you had to go for the rest of us, including me.

I've finally found medicine that works for dear hubby and have gotten him to take it on a regular basis. However, I can't sleep when I take it. I toss and turn and wake up every single hour of the night. They don't make my favorite Benadryl D anymore or my Tylenol Sinus and I'm hoarding my last pills like some kind of crazed crack whore. I've finally discovered Advil Sinus that kind of does the job. But because of all the crazy meth heads out there I have to wait in line at the pharmacy and pick up two different kind of barely legal meds - one for me, one for the hubby. I always catch slack from whoever is working in the pharmacy and they all tell me that I can't buy two different kinds of meds. I ensure them that yes, yes I can, I've done it plenty of times now and then I get the suspicious look. I've bought so many psuedoephedrine products now I'm probably on some governmental watch list for suspected meth producers and it's all thanks to you Mountain Cedar.

So why don't you do us all a favor and just hit the road already? Give some other allergen a chance to make us miserable. I need a break. Plus, I don't feel like being carted off for suspected meth production and I'm starting to get to a dangerously low level of Benadryl D. I will need those lovely blue pills in the spring.

That's Spray Tan Honey

Last night I came home from work early cuz I felt like crap (see post below). I change into sweats and immediately crawl under the covers. I'm laying there FREEZING. My feet are like icecicles and my body is sore from shivering. I'm convinced that I have the flu. I finally get up to go and take my temp, throw on my big wool coat for extra measure and pass by the thermostat. It's freaking 62 degrees. John had turned the heater off. I turn the heat on and go to make myself soup. John walks in wearing nothing but his underwear. The man has lost his mind! He says, "it's warmer in here than is is outside." Then he looks at me and says, "you don't look so good. You look kind of yellow. Are you jaundiced?" Me, to myself of course, "that's spray tan honey."

My Head Is Going to Explode

My head is going to explode. Not even the lovely meds with the meth ingredients are helping me. It's a sad sad day when the meth does me no good.

Plus I had trouble sleeping last night. Riley kept jumping on the bed. We got our new comforter so I'm really trying to break that habit. When I finally got him off and tried to go back to sleep, Abe's stomach kept growling. Poor guy. We're watching him while John's sister is out of town and Reese has been a total Biotch to him. She won't let him eat even! I have to kick her out of the room so he can get a bite. So last night I took him into the kitchen and put some treats in his bowl so he'd eat.

I also feel like I am never going to be warm again. My client decided to keep the heater off during a 2 hr meeting since it was so loud. I'm lucky I didn't have to go to the ER for frostbite. John also no longer believes in the heater because he's hot all the time. What about my comfort!?

I have class tonight with the first of many, many quizzes. Blah. I even have to buy scantrons. I also need to do my spray tan. I'm getting my hair ripped out tomorrow. I need to clean the crap out of my house for the house warming this weekend - not an easy task when you've got three dogs running around. Did I mention that my head is going to explode? This week should be fun!

I once was blind, but now I see....

So I lost my corneal moldings this past weekend. Actually, they got left in a hotel room in Austin. The hotel didn't have them and of course the eye doctor was closed on Sunday and Monday. I was FINALLY able to get in today and surprise, surprise they had NO CLUE what I was talking about. I did get some regular contacts and I'm thinking about ordering the moldings again. The doctor said there are new lenses that are better and correct your vision for longer. I'll give regular contacts a try for a bit and see if I want to go back. It's sad that after 10 years in contacts and 2 years out I can't remember what it was like to wear them.

I did have some good laughs being blind - and was made fun of quite a bit. John thinks I should just become a bat and start using sonar. Easy for you to say Mr. Perfect Vision. His funny of the day was while he was driving me to HEB. He says, "babe do you have your list?" Me, "yeah." Him, "is it in braille?" HaHaHa funny man.

General Ramblings

I got my first ever spray tan last night. I don't think I used enough cream on my feet cuz they look funny. Thankfully it's only on the bottoms and it's probably because I have freaky feet that have the world's thickest calluses on the bottom. I also realized that I didn't tilt my chin up a bit so I was all splotchy. In fact my neck looked like it did when I was 10 and wore the fake necklace for too long and it turned dark and dirty looking. A ton of scrubbing solved that problem too. I think I still smell like spray tan though. It's probably just me and I'm sure I will have someone smell me later just to make sure, but I keep getting whiffs of it. It's probably coming from my freakish orange feet.

John got to sleep in today and I hated him for it. It was such a PITA trying to get ready this morning. I had to be all quiet, keep the doors closed so the light didn't go into the room. I actually got ready in the other bathroom because the mirror was still foggy in ours. Then when I left the dogs decided to get up and go crazy. The nails clicking on the floor can be like nails on a chalkboard sometimes. Just wait until I pull out the dremel on you you two crazies. We'll get even then.

I leave this morning's entry with Hat Guy. He gave me the, "How you doin'?" at the bar the other night. Seriously. Why would you go to Silo looking like this?

Observations of people at work

Our admin doing her usual, "sigh, what does that mean? I don't knwo what they're talking about. Don't they know anything? I've already done that, German swear word, German swear word."

The Jack In the Box manager working the driver thru. So chipper she scared me. She opened the window and actually said, "TaDa! Sourdough Combo with Curly Fries! Have a great day!"

One of our cleaning guys mopping the bathroom floor jamming out to Amy Grant's "Baby, Baby."

Me sitting at my desk eating my chicken parmesean for dinner (I hate going back to school) hollaring at the guy in the office next to me about the specials tonight at the Saucer.

Oh, and for those counting

YAY!!!!!!

Mmmm....

I asked the Nestie D&R girls for some appetizer recipes for my upcoming Open House. I was referred to a couple of blogs and found what look to be two amazing dessert recipes. I can't wait to get home and try these!

The first is Chocolate Chip Cookie Dough Dip from The Domestic Diva




Ingredients
1/2 cup (1 stick) butter
1/3 cup brown sugar
1 tsp. vanilla extract
1 (8-oz) pkg cream cheese
1/2 cup confectioner's sugar
3/4 cup semisweet mini chocolate chips

Directions
1. In a small saucepan, melt the butter with the brown sugar over medium heat. Stir continuously, until the brown sugar dissolves. (You can also do this in the microwave but watch it closely. The butter/sugar mixture will boil over fast. Stir every 30 seconds or so.)

2. Remove from heat, whisk in vanilla extract and set aside to cool.

3. Beat the cream cheese and confectioner's sugar for 1 minute.

4. Slowly beat in the cooled butter mixture and beat again for another minute.

5. Stir in the chocolate chips.

6. Pour into a serving bowl and refrigerate.

7. Garnish with additional chips & serve with Nilla wafers or graham crackers.

p.s. after refrigerating the dip it will be pretty solid and un-dippable so make sure to remove it from the refrigerator about 15-30 minutes before you plan on serving it, so it has time to soften up

The 2nd is a Apple Cake with Caramel Sauce from Good Eats 'n Sweet Treats



1 1/2 cups (3 sticks) unsalted butter, at room temperature, plus more for the dish
1 cup granulated sugar
1 cup light brown sugar
3 eggs
3 cups all-purpose flour, plus more for the dish
1 teaspoon baking soda
3 teaspoons ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon kosher salt
5 Granny Smith apples, peeled, cored, and cut into a 1/2-inch dice
1 1/4 cups coarsely chopped pecans (optional)
2 1/4 tsp vanilla extract
Caramel Glaze, recipe below (optional)
Vanilla ice cream (optional)

Heat oven to 325° F.

In a large bowl, using an electric mixer on medium-high, beat the butter and the granulated and brown sugars until light and fluffy, 3 to 5 minutes. Add the eggs, one at a time, beating after each addition. In another bowl, combine the flour, baking soda, cinnamon, nutmeg, and salt. Using a wooden spoon, gradually add the flour mixture to the egg mixture. The batter should be very thick. Stir in the apples, pecans, and vanilla. Scrape the batter into a buttered and floured 9-by-13-inch baking pan. Bake until a toothpick inserted in the center comes out clean, 50 to 60 minutes (it took 65 minutes in my oven). Transfer to a wire rack. Let cool for at least 10 minutes while you make the Caramel Glaze, if using.

With a spatula, loosen the sides of the cake. If you want to remove it from the pan, invert it onto a baking sheet, then invert it again, right-side up, onto a platter. With a toothpick or fork, poke holes all over the surface. Pour on the warm sauce. Serve warm or at room temperature, with ice cream, if desired.

Tip: This rich, moist cake travels exceptionally well in its baking pan.

Caramel Glaze

4 tablespoons unsalted butter
1/4 cup granulated sugar
1/4 cup light brown sugar
1/8 teaspoon kosher salt
1/2 cup heavy cream

In a saucepan, over medium-low heat, melt the butter. Add the granulated and brown sugars and salt. Cook, stirring frequently, for 2 minutes. Stir in the cream and bring to a boil. Cook, stirring constantly, for 2 minutes. Remove from heat.

Yield: Makes 16 servings

Target 2, me 0

Yeah, yeah. I went to Target again last night to get light bulbs and some other thing and left $150 poorer. Ahhhh! Why do you do this to me Target? Why?

Of course it is all stuff that I NEED or can at least justify needing in the near future. I mean we NEEDED the wrought iron table and chairs for the patio, and a rug for when you come in through the front door or garage, as well as a 2nd front door mat since the first one was square and not quite big enough, oh yeah - we needed those light bulbs too.

Plus they have the Global Bazaar stuff. Thankfully, although I did try to talk myself into it, I did not spend $180 on the most perfect trunk in the whole wide world that goes with my living room and would be the perfect thing I have been searching to put all my blankets in.

So today after work I am going to brave Target again. They are the only ones I have found that have my Tylenol Sinus behind the counter. That stuff works like magic and we're all out.

Ok Target, it's you and me. I will go in and not fall prey to your amazing deals, like the Riedel wine decanter and 2 wine glasses that were on clearance last night for $25 down from $40, which of course we NEEDED and bought only to immediately return because we found out that one of the glasses were broken. Or that I KNOW this particular location has the most perfect table top fire pit that I have been lusting over. I WILL go in and only buy Tylenol Sinus and some saline nose stuff for John. Tomorrow I will be able to post: Target 2, me 1!

Ohhhhh.....Target

I swear Target should just charge me a cover charge when I go in there. I'll walk in, they'll say, "Hi, Mrs. H. It'll be $100 please." I'll say, "ok" and pay up. We'll just call it even after that. Sounds like a deal to me!

I mean what is it with Target!? You can go in wanting one thing and walk out with a whole cart load full of crap. It adds up so fast too! You walk out of there thinking, "what the hell did I just buy that was so much money?" It blows your mind every time. Damn you Target, Damn you.
