The List

I've gotten really bad at doing updates, but here we go!

I tried 2 new recipes. One was eggplant parmigiana. It was meh, and is the reason why there were no pictures. I will probably make this again, but maybe grill the eggplant some beforehand. It didn't really get cooked all the way through.

The second was one I used to make at La Madeleine. It's a chicken pesto pasta. I found some chicken breasts on sale for $1/lb at HEB. Even though they had the bone, it was too good a deal to pass up. So I threw one of them in the crockpot so I had some nice shredded chicken when I got home. Ingredients required:
1lb chicken breast
Chopped garlic
Basil pesto
1/2 lb of pasta (La Mad uses bow tie, but I couldn't find any)
Diced Tomatoes
Olive Oil

The basics:

Throw some olive oil in the pan and add the garlic

You should add the pesto after that, but I got it messed up. Oh well, it was still delicious!

Then throw it all in with your pasta and viola! Chicken Pesto Pasta
We also went to the zoo and had a picnic (even if it was in the car - it was HOT in my defense).

Tried 2 new restaurants. One being Trudy's in Austin the day after the bach party which was fab! John had also been telling me that I HAD to try Freddy's Frozen Custard because the food was a lot like Steak N Shake. Big freaking let down. The ONLY similarity was that they had steakburgers and shoestring fries. The End.

John and I also fit it another romantic date night somewhere in this mix.

Thanks to some recent rain in the form of Dolly I've gotten the grass to grow in the backyard. John also recently removed the tree stump, so I've got to work this area. It may have to wait until it's cooler though.

We also redid the living room. We got a new entertainment center, hung some curtains and bought new pillows. The entertainment center was the only thing on the list though. I'm also too obsessed with watching gymnastics at the moment to take any pictures. So those will all come later.
